Weekend and Linguine with Garlic Breadcrumbs

So this weekend was a good relaxing one! Friday I had a haircut and then that night Jace and I went to dinner at Ruby River for my belated birthday. We had a gift card there so it made it even better J Then Saturday we got up and went to Granny Annies for some breakfast because I was craving a scone. After Granny Annies I went to run some errands and Jace started working on his RZR and cleaning up the garage. I swung by the Gateway and ran into JMR to fine some amazing deals. 75% off a cute skirt and top which I always love finding great deals! The rest of Saturday was spent grocery shopping, cleaning the house and the yard up. I also spray painted my new jewelry holder from my mom black to match my bathroom. I think it turned out really great and I love how much stuff it holds!

Then we went to see the movie “The Vow” since it was my choice Jace was very excited to go. I thought it was really good Jace said it was ok. Then today we went to church and just came home to relax. It was nice to have a day to just sit and relax and spend time together. Tonight I made a delicious Linguine with Garlic Breadcrumbs I found on Pintrest. It was super easy and really yummy. I found the recipe here and I followed everything on the recipe pretty close just made a few tweaks:

Linguine with Garlic Breadcrumbs:
2 slices of bread put in my food processor (toasted at 250 degrees for 20-30 minutes). I seasoned mine with garlic salt and onion salt.
I also added shredded Parmesan cheese

Jace wanted some meat with his so he heated up some Parmesan Crusted Pork Chops I made for lunch. I posted the recipe in this post. I also made up some of my favorite garlic bread to go with it that I mentioned in this post. It was a great relaxing weekend

Spaghetti Sauce-Stove Fixed!!

Last night we had the missionaries over for dinner. Because they like to be feed by 5pm and Jace and I both work it was a bit of a struggle trying to get everything together by 5pm. Also because our stove has been broken for about a month now, I resorted to my crockpot for some Spaghetti Sauce. It was also nice that it could cook all day while I was at work. I called my mom and asked her what she always uses and I was informed of the following:

Spaghetti Sauce in Crockpot
I used a mixture of sausage and hamburger (cooked and drained first)
I added 2 jars of Ragu sauce
Seasoned with garlic salt, garlic powder, onion salt, onion powder, Italian seasoning, Parmesan cheese and the secret (according to my mom) was about ¼ cup brown sugar. I would never have guessed that on my own but I think it turned out really good.
Didn't take a picture until I cleaned up everything and it was in tupperware.

Then I rushed home a little early from work to throw some noodles on my handy stove top and a salad together. All in all it turned out pretty good for the minimal effort it took. But speaking of my oven being broken, Jace fixed it last night after the missionaries left!

A couple weeks ago when we realized unplugging it and trying all the blog recommendations out there wasn’t going to fix it, Jace determined that it was the control board that needed to be replaced. So he got online did some research and was able to order replacement parts for about $125. The parts finally came in yesterday and he was able to fix it and put everything back together. I won’t lie I was a little doubtful that he would be able to get everything back together but of course he proved me wrong and its back and working great! I will be happy to have my stove back since it’s been a little difficult trying to cook with a toaster oven and on a camper stove. Thanks again Jace for fixing it and saving us the money of paying someone else to do it!!

He insisted I take pictures of the wires to help him put it back together...Not sure how he was able to understand it all but he did. Just looking at it stressed me out.

Parmesan Chicken and Garlic Bread

Tonight I was craving Italian so I made Parmesan chicken and garlic bread. Both recipes are pretty easy to make and really yummy.

Parmesan Chicken

Ingredients
1 cube butter, melted
3 pieces of bread (put in blender/food processor and chop fine)
Chicken breast
Shredded parmesan cheese
Red sauce (Ragu-can season with Italian seasoning, garlic and onion salt)

Directions
Put bread crumbs in bowl
Add ½ cup shredded parmesan cheese
½ tsp. garlic powder

Dip chicken breasts into butter and coat with bread mixture. Lay chicken in pan, bake at 325 degrees for 1 hour. Add red sauce on top and sprinkle with cheese (last 15-20 minutes).  Serve over noodles and with additional red sauce.

Easy Grilled Garlic Bread

1/2 C butter, softened
1/4 C mayonnaise (I use Best Foods)
1/2 t garlic salt
1 t parsley
Parmesan Cheese (the kind in the green bottle)
1 loaf French bread 

1. In a small bowl combine the butter, mayonnaise, garlic salt and parsley. Stir it all together until well combined. 
2. Heat up your skillet, or griddle over medium high heat.  Cut your bread into slices about 1 and 1/2 inches thick. 
3. Butter BOTH sides of each piece of bread. 4. Lay several slices on the skillet. 
4. Lay several slices on the skillet. 
5. Sprinkle Parmesan cheese over the top of each piece of bread. Carefully tap it in to be sure it sticks to the buttery spread. 
6. When the bottoms of the slices are golden brown, flip them over and let them get browned on the other side. 
7. Serve while still hot off the griddle.

Pepperoni Roll

I recently have a new addiction to Pintrest and the other day I found a recipe that looked pretty quick, easy and yummy. So yesterday morning before I went to work I set out the Rhodes roll loaf of bread as instructed then came home to prepare the Pepperoni roll I had found on this blog. I did a few things differently but overall it was easy and I followed this pretty closely. Since I’m not home during the middle of the day to let the rolls thaw for just a few hours, mine sat out all day and the loaf got really huge!
I also decided that I wanted some sauce on mine so I added a little Ragu sauce and then seasoned that before I layered with pepperoni slices and cheese. I struggled rolling it all up into a beautiful roll so mine was a little deformed looking but it still turned out good. Another side note is that this blog said it takes 15-25 minutes. Maybe I didn’t roll my dough thin enough but 25 minutes cooked the outside perfectly but the inside was still doughy. So I put tin foil on mine to keep it from burning outside and cooked for about another 20 minutes. When it was finally done cooking though it was delicious, pretty easy meal to throw together and serve with just Caesar salad. So thank you Pintrest!

Creamy Italian Noodles

Ok so real quick the other night Jace and I had finally made it through all the Thanksgiving leftovers and I had to cook something or we were eating cereal. So I looked through a few different recipes and found this super easy and fast one from a good family friend, Carol Kalar. It’s called Creamy Italian Noodles. It was so quick and easy and really yummy!

Creamy Italian Noodles
1 8 oz package wide egg noodles
½ cup half and half
2 ¼ teaspoon Italian dry salad dressing mix
¼ cup butter
¼ cup grated Parmesan cheese
Cook noodles, drain and add all other ingredients.
(I doubled the sauce ingredients since Jace likes extra sauce).


I then made some Easy Grilled Garlic bread from this blog. So quick and good, went perfectly with the noodles.
